Sausage, Egg, and Cheese Breakfast Roll-Ups

Ingredients:
1 lb breakfast sausage
6 large eggs
Salt and black pepper, to taste
1 cup shredded cheddar cheese
8 large flour tortillas
Directions:
Cook Sausage: In a large skillet over medium-high heat, cook breakfast sausage until browned and cooked through. Break into smaller pieces as it cooks. Drain excess fat.
Scramble Eggs: In a bowl, whisk together eggs with salt and black pepper. Scramble the eggs in the same skillet as the sausage until cooked through.
Assemble Roll-Ups: Lay out the flour tortillas. Sprinkle shredded cheddar cheese evenly over each tortilla. Add a layer of scrambled eggs and cooked sausage on top of the cheese.
Roll Up: Roll up each tortilla tightly to enclose the filling.
Serve: Optionally, you can warm the roll-ups in a skillet for a minute on each side to lightly crisp them and melt the cheese.
