Ingredients:
1 pound ground beef
1 packet taco seasoning mix
1 can (15 ounces) refried beans
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies, drained
1 cup salsa
6 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream (optional)
Chopped green onions and cilantro for garnish (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or a deep-dish pie pan.
Cook the Ground Beef:
In a large skillet, cook the ground beef over medium-high heat until browned and fully cooked. Drain any excess fat.
Add the taco seasoning mix and water according to the package instructions. Stir in the refried beans, corn, diced tomatoes, and salsa. Cook until heated through, then remove from heat.
Assemble the Pie:
Place one tortilla in the bottom of the prepared pan. Spread a layer of the beef mixture over the tortilla, followed by a sprinkle of cheddar cheese.
Repeat the layers, ending with a tortilla on top.
Sprinkle the remaining cheddar cheese and Monterey Jack cheese over the top layer.
Bake the Pie:
Cover the pan with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Cool and Serve:
Allow the taco pie to cool for 5-10 minutes before slicing.
Garnish with a dollop of sour cream, chopped green onions, and cilantro, if desired.
