Ingredients:
1 medium sweet potato
2 cups whole wheat flour (or any flour of your choice)
1 packet instant yeast (about 2¼ teaspoons)
1 teaspoon sugar
½ teaspoon salt
Warm water
Optional: nuts, seeds, or dried fruits for added texture and flavor
Instructions:

Prepare the Sweet Potato:
Peel and dice the sweet potato. Boil in water until soft, about 15 minutes.
Drain and mash the sweet potato until smooth. Let it cool to room temperature.
Make the Dough:
In a large bowl, mix the flour, yeast, sugar, and salt.
Add the mashed sweet potato to the flour mixture and begin to mix. Gradually add warm water and knead until the dough is soft and elastic. If you like, knead in your choice of nuts, seeds, or dried fruits at this stage.
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Cook the Bread:
Once the dough has risen, punch it down and shape it into a loaf.
Preheat a large skillet or heavy-bottomed pan over medium-low heat. Place the dough in the pan and cover with a lid. Let it cook for about 20 minutes on each side. Check occasionally to avoid burning. The bread should be golden brown on both sides and sound hollow when tapped.
