Ingredients:
For the Curry Goat:
2 lbs goat meat, cut into chunks
2 tbsp Jamaican curry powder
1 tbsp allspice
1 tbsp garlic powder
1 tbsp ginger powder
1 tsp thyme
1 onion, chopped
4 cloves garlic, minced
1 bell pepper, chopped
1-2 Scotch bonnet peppers, chopped (adjust to taste)
1 can (14 oz) coconut milk
2 cups beef or chicken broth
2 tbsp tomato paste
2 tbsp vegetable oil
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
For the Coconut Rice:
1 cup long-grain white rice
1 can (14 oz) coconut milk
1 cup water
1/2 tsp salt
1/2 tsp sugar
1-2 sprigs fresh thyme (optional)
Instructions:
Prepare the Curry Goat:
Marinate the Goat:
In a large bowl, mix the goat meat with curry powder, allspice, garlic powder, ginger powder, thyme, salt, and pepper.
Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
Brown the Goat:
Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
Add the marinated goat meat and brown on all sides. Remove the meat and set aside.
Sauté the Aromatics:
In the same pot, add the chopped onion, garlic, bell pepper, and Scotch bonnet peppers. Sauté until the onions are translucent.
Cook the Curry:
Return the browned goat meat to the pot.
Stir in the tomato paste and cook for 1-2 minutes.
Add the coconut milk and beef or chicken broth.
Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender and the sauce has thickened. Stir occasionally.
Season and Garnish:
Adjust seasoning with salt and pepper.
Garnish with chopped fresh cilantro before serving.
Prepare the Coconut Rice:
Rinse the Rice:
Rinse the rice under cold water until the water runs clear. Drain well.
Cook the Rice:
In a medium pot, combine the coconut milk, water, salt, and sugar. Bring to a boil.
Stir in the rice and reduce the heat to low. Cover and cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork.
If using, add fresh thyme sprigs during cooking for extra flavor.
