Mozzarella and Tomato Basil Panini
Ingredients:
4 slices of sourdough bread
4 slices of fresh mozzarella cheese
1 large tomato, sliced
A handful of fresh basil leaves
2 tbsp olive oil or butter (for grilling)
Balsamic glaze (optional, for drizzling)
Instructions:
Lay two slices of bread on a clean surface.
Add two slices of mozzarella cheese on each piece of bread.
Layer the tomato slices and fresh basil leaves on top of the cheese.
Place the other two slices of bread on top to form sandwiches.
Heat a pan or panini press over medium heat, and brush the outside of the sandwiches with olive oil or butter.
Grill the sandwiches for 3-4 minutes per side (if using a pan) or until golden brown and the cheese is melted.
Optional: Drizzle with balsamic glaze before serving for added flavor.
2. Caprese Salad with Mozzarella Slices
Ingredients:
4 slices of fresh mozzarella cheese
2 large ripe tomatoes, sliced
A handful of fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar or glaze
Salt and black pepper, to taste
Instructions:
Arrange alternating slices of mozzarella cheese and tomato on a plate.
Tuck fresh basil leaves between the slices.
Drizzle with olive oil and balsamic vinegar or glaze.
Sprinkle with salt and black pepper to taste.
Serve immediately for a refreshing and simple salad.
3. Mozzarella-Stuffed Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
4 slices of mozzarella cheese
4 slices of prosciutto (optional, for extra flavor)
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper, to taste
Instructions:
Preheat your oven to 375°F (190°C).
Carefully cut a pocket into the side of each chicken breast.
Stuff each pocket with a slice of mozzarella cheese (and a slice of prosciutto if desired).
Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
Heat olive oil in a large oven-safe skillet over medium heat.
Sear the chicken breasts for about 2-3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.

4. Mozzarella-Stuffed Garlic Bread
Ingredients:
1 baguette or Italian bread loaf
4-6 slices of mozzarella cheese
4 tbsp butter, melted
2 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tsp dried oregano
Instructions:
Preheat the oven to 350°F (175°C).
Slice the baguette or loaf into sections, being careful not to cut all the way through to the bottom.
In a small bowl, mix the melted butter, minced garlic, parsley, and oregano.
Place a slice of mozzarella cheese between each section of bread.
Brush the garlic butter mixture over the top and inside the slits of the bread.
Wrap the bread in foil and bake for 10-15 minutes, until the cheese is melted and the bread is golden.
Unwrap and serve warm for a gooey, garlicky treat!
5. Mozzarella & Veggie Quesadilla
Ingredients:
2 large flour tortillas
4 slices of mozzarella cheese
½ bell pepper, thinly sliced
½ red onion, thinly sliced
½ zucchini, thinly sliced
1 tbsp olive oil
Salt and pepper, to taste
Salsa or guacamole, for serving
Instructions:
Heat olive oil in a skillet over medium heat and sauté the bell pepper, onion, and zucchini for 5-6 minutes, until softened. Season with salt and pepper.
Lay one tortilla flat in the skillet, and place two slices of mozzarella cheese on one half.
Add the sautéed vegetables on top of the cheese.
Fold the tortilla in half, pressing down gently, and cook for 2-3 minutes on each side until golden and crispy.
Repeat with the second tortilla.
Slice and serve with salsa or guacamole on the side.
