Ingredients:
• 1 cup (2 sticks) unsalted butter
• 1 cup packed light brown sugar
• 1 cup granulated sugar
• 1 (14-ounce) can sweetened condensed milk
• 1 teaspoon vanilla extract
• 1 cup (2 sticks) unsalted butter, softened
• 1 cup pecans, chopped
• 1 cup chocolate chips (optional for topping)
Instructions:
1. Prepare a Baking Dish: Line a 9×13 inch baking dish with parchment paper or lightly grease it.
2. Make the Caramel:
• In a saucepan over medium heat, melt 1 cup of unsalted butter.
• Stir in the brown sugar, granulated sugar, and sweetened condensed milk.
• Bring to a boil, stirring constantly. Cook for about 5-7 minutes until it thickens slightly.
3. Add Vanilla:
Remove from heat and stir in the vanilla extract.
4. Combine with Pecans:
• Add the chopped pecans to the caramel mixture and stir until well combined.
5. Pour Mixture:
Pour the caramel and pecan mixture into the prepared baking dish, spreading it evenly.
6. Cool:
Allow it to cool at room temperature for about 30 minutes. If using, sprinkle chocolate chips on top while still warm, allowing them to melt slightly. Swirl with a spatula for a marbled effect.
7. Chill:
Refrigerate for at least 2 hours until firm.
8. Cut and Serve:
Once firm, cut into squares and enjoy!
Storage:
Store in an airtight container at room temperature or in the refrigerator for up to a week.
