1 tablespoon of olive oil
2 garlic cloves, finely chopped
1 small onion, chopped
1 pound of Italian sausage (or ground beef)
1 can of diced tomatoes (14.5 oz), including the liquid
4 cups of chicken broth
1 teaspoon of mixed herbs
Break 8 lasagna noodles into pieces.
1 cup of heavy cream or half-and-half
1 cup of grated mozzarella cheese
1/2 cup of shredded Parmesan cheese
Fresh basil or parsley, chopped, to sprinkle on top (if desired)
Instructions:
Cook the chopped vegetables in a little oil.
In a big pot, warm up olive oil on medium heat.
Put the chopped onion in the pan and cook until it becomes soft, which should take around 5 minutes.
Put the garlic in the pan and cook for one more minute.
Prepare the sausage:
Put the Italian sausage in the pot and cook it until it turns brown, using a spoon to break it into smaller pieces.
Remove any extra grease.
Put broth and tomatoes. Pour in the chicken broth, diced tomatoes, and Italian seasoning.
Bring to a simmer.
Add Lasagna Noodles: Stir in the broken lasagna noodles and cook until tender, about 10-12 minutes.
Make it Creamy:
Reduce the heat to low and stir in the heavy cream, mozzarella, and Parmesan. Stir until the cheese is melted and the soup is creamy. Adjust salt and pepper to taste.
Serve:
Ladle the soup into bowls and garnish with fresh basil or parsley if desired.
