EAT OR PASS?Shrimp ceviche with avocado

Ingredients

  • 1 lb raw shrimp, peeled, deveined & diced
  • 1 cup lime juice (freshly squeezed)
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded & minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp chili flakes (optional)
  • Salt & pepper to taste
  • Tortilla chips for serving
  • Lime wedges for garnish

Method

  1. Marinate shrimp: Toss the diced shrimp with lime juice in a bowl. Cover & refrigerate for 30–45 minutes, or until the shrimp turns opaque (the acid “cooks” it).
