Roasted cauliflower & chickpea dish.

Ingredients

  • 1 large cauliflower, cut into florets
  • 1 can (15 oz) chickpeas, drained & rinsed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 2 tbsp honey or maple syrup (for glaze)
  • 1 tbsp lemon juice
  • ¼ cup sliced almonds
  • Fresh parsley, chopped (for garnish)

Method1. Preheat oven to 200°C (400°F).

  1. Toss cauliflower & chickpeas with olive oil, paprika, cumin, garlic powder, salt & pepper.
  2. Roast on a baking sheet for 20–25 min, turning once, until golden & tender.
