Ingredients:
4 boneless, skinless chicken breasts
1 cup lump crab meat
1 cup shrimp, peeled, deveined, and chopped
1 cup white fish fillet, chopped
1 cup cream cheese, softened
1 cup mozzarella cheese, shredded
½ cup Parmesan cheese, grated
2 cloves garlic, minced
1 tsp lemon zest
1 tbsp fresh parsley, chopped
1 tsp salt
1 tsp black pepper
2 tbsp olive oil
Toothpicks or kitchen twine
Instructions:
Preheat oven to 375°F (190°C).
In a large bowl, combine crab meat, chopped shrimp, chopped white fish, cream cheese, mozzarella cheese, Parmesan cheese, garlic, lemon zest, parsley, salt, and black pepper. Mix until well combined.
Butterfly the chicken breasts by slicing them horizontally without cutting all the way through, creating a pocket.
Stuff each chicken breast with the seafood mixture, securing with toothpicks or kitchen twine.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Remove toothpicks or kitchen twine before serving.
