First, preheat your oven to 375°F (190°C) to warm up your kitchen and your heart. In a large mixing bowl, combine the ground beef, diced onion, lightly beaten eggs, seasoned bread crumbs, chopped parsley, coarse ground salt, and pepper. Mix everything together until it’s just combined – you don’t want to overmix, or your meatballs might end up tough.
