🥑 Avocado Egg Salad

Ingredients:

2 ripe avocados (diced)

3 hard-boiled eggs (cut into pieces)

1 cup cherry tomatoes (halved)

¼ cup red onion (finely chopped)

2 tablespoons fresh parsley or cilantro (chopped)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and black pepper to taste

Instructions:

1️⃣ Prepare the ingredients
Peel and dice the avocados. Cut the boiled eggs into chunks. Slice the cherry tomatoes and finely chop the onion.

2️⃣ Mix everything
In a large bowl, combine avocado, eggs, tomatoes, and red onion.

3️⃣ Add flavor
Add lemon juice, olive oil, salt, and black pepper.

4️⃣ Toss gently
Mix everything gently so the avocado doesn’t get too mashed.
