Ingredients
- 1 large cauliflower, cut into florets
- 1 can (15 oz) chickpeas, drained & rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 tbsp honey or maple syrup (for glaze)
- 1 tbsp lemon juice
- ¼ cup sliced almonds
- Fresh parsley, chopped (for garnish)
Method1. Preheat oven to 200°C (400°F).
- Toss cauliflower & chickpeas with olive oil, paprika, cumin, garlic powder, salt & pepper.
- Roast on a baking sheet for 20–25 min, turning once, until golden & tender.
