2 large russet potatoes

2 tbsp butter

1/2 cup shredded cheddar cheese

2 tbsp sour cream

2 slices bacon, cooked and crumbled

1 tbsp chopped green onions

For the Broccoli

2 cups broccoli florets

1 tbsp olive oil

Salt and pepper

For the Creamy Dipping Sauce

1/2 cup sour cream

1 tbsp mayonnaise

1 tsp Dijon mustard
