Ingredients:
1 lb shrimp, peeled and deveined
20 oz refrigerated cheese tortellini
2 cups baby spinach
1 cup cherry tomatoes, halved
1 cup Alfredo sauce
1 cup shredded mozzarella cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large skillet, cook shrimp until pink and opaque. Remove and set aside.
Cook tortellini according to package instructions. Drain and set aside.
In the same skillet, wilt spinach and add cherry tomatoes.
Stir in Alfredo sauce and cooked tortellini. Mix well.
Add shrimp back to the skillet. Top with mozzarella cheese.
Cover and cook until cheese is melted and bubbly.
Season with salt and pepper. Garnish with fresh parsley before serving.
