Ingredients:
For the Mashed Potatoes:
* 2 lbs russet potatoes, peeled and quartered
* 1/2 cup milk (whole or 2%)
* 4 tablespoons unsalted butter
* 1/4 cup sour cream (optional, for extra creaminess)
* Salt and freshly ground black pepper to taste
For the Steak:
* 4 (6-ounce) sirloin or ribeye steaks (about 1-inch thick)
* 1 tablespoon olive oil

For the Mushroom Gravy:
* 8 ounces cremini mushrooms, thinly sliced
* 2 tablespoons unsalted butter
* 2 tablespoons all-purpose flour
* 2 cups beef broth (low sodium is great!)
* 1 teaspoon Worcestershire sauce (check label for no anchovies if preferred, though most are fine)
* 1/2 teaspoon dried thyme

Instructions:
Get those potatoes cooking! Place the quartered potatoes in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain them well.
- Mash it up! Return the drained potatoes to the warm pot. Add the milk, butter, and sour cream (if using). Mash until smooth and creamy. Season with salt and pepper to your liking. Cover to keep warm.
