Fried Rabbit

Ingredients:
1 whole rabbit, cut into pieces
2 cups buttermilk
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Vegetable oil for frying

Instructions:
Rinse the rabbit pieces and pat them dry with paper towels.

Place the rabbit in a large bowl and pour the buttermilk over the pieces. Cover and refrigerate for at least 4 hours or overnight.

In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.

Remove the rabbit pieces from the buttermilk and dredge them well in the seasoned flour mixture.

Heat vegetable oil in a large deep skillet over medium heat.

Carefully place the rabbit pieces into the hot oil and fry for about 12 to 15 minutes per side until golden brown, crispy, and fully cooked through.

Transfer the fried rabbit to a paper towel-lined plate to drain excess oil.

Serve hot with biscuits, gravy, mashed potatoes, or coleslaw.
