🍰 Homemade Diabetic Sponge Cake

Ingredients:

  • 3 eggs
  • 1 cup almond flour or oat flour
  • 1/2 cup yogurt
  • 1/4 cup olive oil or melted butter
  • 1/3 cup sweetener for diabetics (stevia or erythritol)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Lemon zest (optional)

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Beat eggs with sweetener until fluffy.
  3. Add yogurt, oil, and vanilla. Mix well.
  4. Add flour, baking powder, and salt gradually.
  5. Mix until smooth and creamy.
  6. Pour batter into a greased cake pan.
  7. Bake for 30–35 minutes until golden.
  8. Let cool before serving.
