Ingredients
For the potatoes
🥔 1 ½ pounds baby potatoes, halved if large
🛢️ 2 tablespoons olive oil
🧂 ¾ teaspoon salt
🌶️ ½ teaspoon black pepper
🧄 ½ teaspoon garlic powder
🌿 1 tablespoon chopped parsley
For the chicken
- 🍗 4 boneless, skinless chicken breasts
- 🛢️ 2 tablespoons olive oil
- 🧂 1 teaspoon salt
- 🌶️ ½ teaspoon black pepper
- 🌶️ 1 teaspoon paprika
- 🧄 1 teaspoon garlic powder
- 🍋 1 tablespoon lemon juice
For the vegetables
- 🥦 3 cups broccoli florets
- 🍄 12 ounces mushrooms, sliced
- 🧈 2 tablespoons butter
- 🧄 2 garlic cloves, minced
- 🧂 Salt and black pepper, to taste
For the creamy herb sauce
- 🧈 1 tablespoon butter
- 🥛 ½ cup heavy cream
- 🧀 ¼ cup grated Parmesan
- 🌿 2 tablespoons chopped parsley
Instructions
Bake the potatoes. Heat the oven to 425°F / 220°C. Coat the baby potatoes with oil, salt, pepper, garlic powder, and parsley, then roast for 25–30 minutes until tender and golden.
Prepare the chicken. Dry the chicken breasts and season with olive oil, salt, pepper, paprika, garlic powder, and lemon juice. Rest briefly for better flavor.
Cook the chicken. Grill over medium-high heat for 5–7 minutes per side. The chicken should have dark grill marks and reach 165°F / 74°C inside.
Let it rest. Rest the chicken for 5 minutes, then slice it into thick pieces. This keeps the meat moist.
Cook the broccoli. Steam the broccoli for about 5 minutes, just until vivid green and tender but still firm.
Brown the mushrooms. Sauté mushrooms in butter for 6–8 minutes until deeply browned. Stir in garlic at the end and season to taste.
Add creaminess. Warm butter, cream, and Parmesan until smooth, then toss part of the potatoes with the sauce and chopped parsley.
Serve. Place the grilled chicken, roasted potatoes, creamy potatoes, broccoli, and mushrooms in a bowl. Sprinkle with parsley and black pepper.
Helpful Notes, Substitutions & Variations
Do not overcrowd the mushrooms, or they will steam instead of brown. Add a pinch of chili flakes to the chicken seasoning for heat. Green beans or asparagus can replace broccoli.
