Ingredients
1 lb flank steak
2 bell peppers (any color), sliced
1 onion, sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
Salt and pepper to taste
Flour or corn tortillas
Lime wedges
Fresh cilantro (optional)
Directions
- Pour the olive oil into a large skillet and set it over medium-high heat, letting it get nice and hot.
- While the pan heats, season both sides of your flank steak generously with chili powder, cumin, salt, and pepper.
- Lay the steak in the skillet and sear for about 5 to 7 minutes per side, or until it’s cooked just how you like it.
- Once the steak is done, transfer it to a plate and let it rest for a few minutes—this keeps it juicy. Then slice it thinly against the grain.
- In the same skillet, toss in the sliced bell peppers and onion. Sauté until they’re softened, about 3 to 4 minutes, scraping up any flavorful bits left from the steak.
- Warm your tortillas, then fill them with the sliced steak and sautéed veggies.
- Finish everything off with a squeeze of lime and a sprinkle of fresh cilantro if you like. Serve right away and enjoy every bite!
