Filet mignon with creamy sauce with parmesan and mustard

Ingredients :

4 filet mignon steaks
Salt and black pepper to taste
2 tablespoons of the olive oil
1/2 cup heavy cream
1/4 cup grated Parmesan
2 tablespoons of Dijon mustard
1 tablespoon chopped fresh parsley

Instructions :

Season filet mignon steaks with salt and black pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Add the steaks to the skillet and cook 4 to 5 minutes per side for the rare, or until desired donut.
Remove the steaks from the pan and let them sit.
In the same skillet, reduce heat to medium and add heavy cream, parmesan and Dijon mustard. Stir until sauce is smooth and slightly thickened.
For the creamy Parmesan mustard sauce over the filet mignon steaks.
Garnish with fresh chopped parsley before serving.
Remarques :

For richer flavour, add a dash of beef broth to the sauce.
