Bacon and Cheese Butter Swim Biscuits

Ingredients:

2 ½ cups all-purpose flour

1 tablespoon granulated sugar

1 tablespoon aluminum-free baking powder

1 ¾ cups buttermilk (can increase to 2 cups if the batter seems dry)

2 cups small diced bacon

1 ½ cups shredded cheddar cheese

½ cup (1 stick) salted butter, melted

Directions:

Preheat Oven:

Preheat your oven to 450°F (232°C).

Cook the Bacon:

In a skillet over medium heat, cook the diced bacon until crispy. Once cooked, remove the bacon from the skillet and drain on paper towels. Set aside.

Mix Dry Ingredients:

In a large mixing bowl, whisk together the flour, sugar, and baking powder.

Add Wet Ingredients:

Pour the buttermilk into the dry ingredients and stir until just combined. The batter should be slightly thick but pourable. If it seems too dry, add a little more buttermilk.

Fold in Bacon and Cheese:

Gently fold the cooked bacon and shredded cheddar cheese into the batter.

Prepare the Baking Dish:

Pour the melted butter into an 8×8-inch baking dish. Carefully spoon the batter over the melted butter, spreading it out evenly in the dish. The butter will come up around the sides of the batter—this is what gives the biscuits their unique texture and flavor.

Bake the Biscuits:

Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Serve:

Let the biscuits cool for a few minutes before cutting them into squares. Serve warm and enjoy!
