Almond and Jam Muffins Recipe

Ingredients

For the Muffins:

1 ½ cups all-purpose flour
1 cup almond meal (or ground almonds)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup granulated sugar
2 large eggs
1/2 cup milk
1/4 cup vegetable oil or melted butter
1 teaspoon vanilla extract
1/2 cup fruit jam (raspberry or your choice)

Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix Dry Ingredients: In a large bowl, combine the flour, almond meal, baking powder, salt, and sugar.
Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Fill Muffin Cups: Fill each muffin cup about halfway with batter. Add a teaspoon of jam on top of the batter and then cover with more batter until almost full.
Top with Almonds: Sprinkle sliced almonds on top of each muffin.
Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
