Golden, crispy Scotch eggs made with perfectly boiled eggs wrapped in seasoned minced meat, coated in breadcrumbs, and deep-fried until crunchy and delicious.

Ingredients

For the Scotch Eggs
• 6 large eggs
• 500g minced beef or chicken
• ½ cup (60g) breadcrumbs
• ¼ cup (30g) all-purpose flour
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 2 tablespoons chopped parsley or spring onions
• 1 teaspoon curry powder

• ½ teaspoon thyme
• ½ teaspoon paprika
• ½ teaspoon black pepper
• 1 teaspoon salt, or to taste
• 1 seasoning cube (optional)

For the Coating
• ½ cup (60g) all-purpose flour
• 2 eggs, beaten
• 1½ cups (150g) breadcrumbs

For Frying
• Vegetable oil, as needed

Instructions

Boil the eggs

Place 6 eggs in a pot of water and boil for about 9–10 minutes until hard-boiled. Transfer them to cold water, allow them to cool, and carefully peel off the shells.

Prepare the minced meat

Place the minced meat in a bowl. Add the chopped onion, garlic, parsley, curry powder, thyme, paprika, black pepper, salt, seasoning cube, and ½ cup (60g) breadcrumbs.

Mix thoroughly until all the ingredients are evenly combined and the mixture holds together.

Wrap the eggs

Divide the meat mixture into 6 equal portions. Flatten each portion between your palms or on a piece of cling film.

Place one peeled egg in the centre of each flattened portion. Carefully wrap the meat around the egg, sealing all the edges completely. Roll gently to create a smooth, round shape.

Coat the Scotch eggs

Roll each meat-wrapped egg in the flour until lightly coated.

Dip it into the beaten eggs, ensuring every part is covered.

Roll it in the breadcrumbs, pressing gently so the crumbs stick well. For an extra-crispy crust, repeat the egg wash and breadcrumb coating.

Fry until golden

Heat vegetable oil in a deep pot over medium heat. Carefully lower the Scotch eggs into the hot oil in batches.

Fry for about 8–12 minutes, turning occasionally, until the coating is golden brown and the meat is thoroughly cooked. Avoid overcrowding the pot.

The meat must reach a safe internal temperature of 71°C (160°F) for beef or 74°C (165°F) for chicken.

Drain and serve

Remove the Scotch eggs from the oil and place them on a wire rack or paper towels to drain excess oil.

Allow them to cool slightly before cutting them in half. Serve with mustard sauce, mayonnaise, ketchup, or your favourite dipping sauce.

Tips for Perfect Scotch Eggs
• Use eggs that are completely cool and dry before wrapping them in the meat.
• Make sure the meat layer is even all around each egg to prevent it from breaking during frying.
• Seal any cracks carefully before coating.
• Maintain medium heat so the outside does not brown too quickly while the meat remains undercooked.
• For extra-crispy Scotch eggs, use panko breadcrumbs.

Storage: Refrigerate cooked Scotch eggs in an airtight container within 2 hours of cooking and consume within 3–4 days. Reheat thoroughly before serving.
