Soup made with mashed potatoes and ground meat

List of ingredients:

2 tablespoons of olive oil

1 onion of medium size, chopped

2 garlic cloves, finely chopped

1 pound of ground beef or ground lamb

2 carrots cut into small pieces

2 pieces of celery, cut into small pieces.

1 cup of peas that are frozen

1 cup of corn kernels (fresh or frozen)

4 cups of beef broth

2 tablespoons of tomato paste
1 teaspoon of Worcestershire sauce

1 teaspoon of fresh thyme, or half a teaspoon of dried thyme.

Add salt and black pepper according to your preference.

1/2 cup of thick cream
4 potatoes of medium size, peeled and cut into small pieces.

Fresh parsley, finely chopped (for decoration)

For the mashed potato topping (if desired):

2 cups of mashed potatoes (you can add a spoonful on top if you like).

2 tablespoons of butter

1/4 cup of milk or cream

Add salt and black pepper according to your preference.

Instructions:

Prepare the meat for cooking. In a big pot or a large cooking pot, warm up 1 tablespoon of olive oil on medium heat.
Put the minced meat on the pan and break it into small pieces with a spoon.
Cook until it turns brown.
Remove extra fat and put it to the side.

Cook Vegetables in a Pan:

In the same pot, put the rest of the olive oil and cook the chopped onion, carrots, and celery until they are soft, for about 5 minutes.
