🛒 Ingredients:
3 pounds chicken thighs
1 cup soy sauce
1 cup pineapple juice (or pineapple chunks with juice)
1 cup brown sugar (packed)
5 cloves garlic (mashed)
1 tbsp fresh ginger (minced)
👨🍳 Instructions:
In a large bowl, mix soy sauce, pineapple juice, brown sugar, garlic, and ginger.
Add the chicken thighs and coat well.
Cover and marinate for at least 2 hours (overnight for best flavor).
Heat a pan or grill over medium heat.
Cook the chicken for about 6–7 minutes per side until fully cooked and nicely caramelized.
While cooking, brush with extra marinade for more flavor.
Optional: simmer the remaining marinade for a few minutes to use as a sauce.
