4ā5 potatoes (peeled & diced)
3 eggs (boiled & chopped)
1/2 cup mayonnaise
1 tbsp mustard
1/2 cup celery (chopped)
1/4 cup red onion (finely chopped)
1/4 cup pickles (chopped)
1 tbsp pickle juice (optional)
Salt & black pepper (to taste)
1 tbsp fresh parsley (chopped)
1/2 tsp paprika (optional)

Boil the potatoes in salted water until tender (about 10ā12 minutes), then drain and let cool.
In a large bowl, mix mayonnaise, mustard, salt, pepper, and pickle juice.
Add the cooled potatoes, chopped eggs, celery, onion, and pickles.
Gently mix everything until well coated.
Sprinkle parsley and paprika on top.
Chill in the fridge for at least 1 hour before serving.
