Hello wonderful friends! Today, I’m sharing a comforting and delicious recipe that’s perfect for a lovely dinner, and it’s super easy on the joints! We’re whipping up a creamy Chicken Alfredo with earthy mushrooms and vibrant asparagus, served over fluffy rice. It’s a hug in a bowl!
This recipe is designed with ease and enjoyment in mind, using simple ingredients you likely have or can easily find.

Ingredients You’ll Need:
1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 8 oz chestnut mushrooms, sliced
- 2 cloves garlic, minced
- 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 12 oz fettuccine pasta (or your favorite pasta shape!)
- 4 tablespoons unsalted butter
- 2 cups heavy cream
- 1 cup grated Parmesan cheese (plus extra for serving)
- Salt and freshly ground black pepper, to taste
- Cooked rice for serving (about 1 cup dry rice cooked according to package directions)
Let’s Get Cooking! Cook the Pasta & Rice: Get your pasta cooking in a large pot of salted boiling water according to package directions. If you haven’t already, cook your rice now so it’s ready to go! Drain the pasta, reserving about 1/2 cup of the pasta water.
- SautΓ© the Chicken & Veggies: While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Mushrooms & Asparagus Magic: Add the butter to the same skillet. Once melted, add the sliced mushrooms and cook until they’re nicely browned and tender, about 5-7 minutes. Then, add the minced garlic and cook for another minute until fragrant. Toss in the asparagus pieces and cook for about 3-5 minutes, until they are tender-crisp and bright green.
- Creamy Alfredo Sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer. Stir in the grated Parmesan cheese, whisking until the sauce is smooth and creamy. Season with salt and pepper to your liking.
- Bring it All Together: Return the cooked chicken to the skillet with the sauce. Add the drained pasta to the skillet as well. Toss everything together gently to coat the pasta and chicken in the glorious Alfredo sauce. If the sauce seems a little thick, add a splash of the reserved pasta water to loosen it up.
- Serve with Love: Spoon the creamy pasta mixture over your fluffy cooked rice. Garnish with extra Parmesan cheese and a crack of black pepper.
