Ingredients:
1 ½ lbs ground beef
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 large eggs
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
For the Mushroom Gravy:
2 tablespoons butter
2 cups mushrooms, sliced
2 tablespoons flour
2 cups beef broth
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
In a large bowl, combine breadcrumbs and milk. Let soak for 2 minutes.
Add ground beef, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
Shape mixture into a loaf and place in a baking dish or lined baking sheet.
Bake for 45–50 minutes or until fully cooked through.
While the meatloaf cooks, melt butter in a skillet over medium heat.
Add mushrooms and sauté until softened and browned, about 5–7 minutes.
Sprinkle flour over mushrooms and stir well to coat.
Gradually add beef broth, stirring constantly until thickened into gravy.
Season with salt and pepper to taste.
Slice meatloaf and serve hot with mushroom gravy poured over the top.
