Ingredients:
2 cups prepared macaroni and cheese, chilled
1 cup all-purpose flour
2 large eggs
2 tablespoons milk
1 1/2 cups breadcrumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Vegetable oil for frying
Instructions:
Place the chilled macaroni and cheese in the refrigerator for at least 2 hours so it becomes firm and easier to shape.
Scoop small portions and roll them into bite-sized balls. Place them on a tray and freeze for about 20 minutes to help them hold their shape.
Set up a breading station with three bowls. Place the flour in the first bowl. In the second bowl whisk together the eggs and milk. In the third bowl mix the breadcrumbs with salt, black pepper, and garlic powder.
Roll each macaroni ball in flour, then dip into the egg mixture, and finally coat thoroughly with the breadcrumb mixture.
Heat about 2 inches of vegetable oil in a deep pot to 350°F. Fry the bites in batches for 2 to 3 minutes until golden brown and crispy.
Remove with a slotted spoon and drain on paper towels.
Serve warm as a crispy, cheesy appetizer or snack.
