Biscuits and Sausage Gravy


Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold butter (cubed)
3/4 cup milk
250 g ground breakfast sausage
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
Salt and black pepper to taste

Instructions
Preheat oven to 220°C (425°F). In a bowl, mix flour, baking powder, and salt. Add cold butter and rub until crumbly. Stir in milk until a soft dough forms.
Roll out dough, cut into biscuits, and place on a baking tray. Bake for 12–15 minutes until golden.
In a skillet, cook sausage over medium heat until browned. Do not drain all the fat.
Add butter, then sprinkle in flour and stir for 1–2 minutes to form a roux.
Slowly pour in milk while stirring constantly until thick and creamy. Season with salt and black pepper.
Split warm biscuits and spoon the sausage gravy generously over the top.
