2 cups grated potatoes (drained well)
1 cup shredded cheese (mozzarella or cheddar)
2 eggs
3–4 tablespoons flour
1 small onion, finely chopped (optional)

- In a mixing bowl, combine the grated potatoes, shredded cheese, eggs, flour, and spices.
- Mix until you get a thick batter-like consistency.
- Heat oil in a non-stick pan over medium heat.

- Fry each fritter for 2–3 minutes per side until golden and crispy.
- Remove and place on paper towels to absorb excess oil.
