A nourishing vegetable soup packed with fresh vegetables, herbs, and comforting flavors.
Ingredients
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 2 medium potatoes, diced
- 1 cup cabbage, chopped
- 1 cup green beans, chopped
- 1โ2 tbsp olive oil
- 6 cups vegetable broth (or water)
- 1 tsp salt, or to taste
- ยฝ tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- Optional: 1 tsp turmeric
- Fresh parsley or cilantro, for garnish
Instructions
1. Sautรฉ the Vegetables
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, celery, and carrots.
- Cook for 5โ7 minutes until softened.
2. Add Remaining Vegetables
- Stir in bell pepper, zucchini, potatoes, cabbage, and green beans.
- Cook for 2โ3 minutes, stirring occasionally.
3. Add Broth and Seasonings
- Pour in the vegetable broth or water.
- Add salt, black pepper, thyme, oregano, and turmeric if using.
- Stir well.
4. Simmer
- Bring to a boil.
- Reduce heat and simmer for 25โ30 minutes, or until all vegetables are tender.
5. Serve
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley or cilantro.
- Serve hot.
