Ingredients:
For the Salad:
2 ripe avocados, diced
2 cups sweet corn kernels (fresh, grilled, or frozen and thawed)
1 English cucumber, sliced
2 cups cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
2 tablespoons fresh parsley, chopped
For the Dressing:
3 tablespoons extra-virgin olive oil
Juice of 2 limes
1 garlic clove, minced
1 teaspoon honey
1/2 teaspoon chili flakes
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions:
If using fresh corn, cook or grill it until tender. Allow it to cool before cutting the kernels from the cob.
In a large serving bowl, combine the corn, cucumber, cherry tomatoes, red onion, cilantro, and parsley.
Dice the avocados into bite-sized chunks and gently fold them into the salad.
In a small bowl, whisk together the olive oil, lime juice, garlic, honey, chili flakes, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently to coat all the ingredients without mashing the avocado.
Let the salad sit for 5–10 minutes so the flavors can meld together.
Taste and adjust seasoning with additional lime juice, salt, or chili flakes if desired.
Garnish with extra cilantro and a sprinkle of chili flakes before serving
