- Start the Potatoes
Heat the oven to 400Β°F and line a baking tray with parchment paper. Toss the halved potatoes with olive oil, salt, and black pepper, then arrange them in an even layer on one side of the tray.
2.Whisk the Glaze
Stir together the Dijon mustard, whole grain mustard, maple syrup, soy sauce, lemon juice, and minced garlic until smooth and well blended.
3.Coat the Salmon
Set the salmon fillets on the open side of the tray. Brush the tops generously with the maple mustard mixture, reserving any extra glaze for finishing.
4.Roast Together
Place the tray in the oven and roast until the salmon is cooked through and the potatoes are crisp and golden, about 12 to 15 minutes for the fish. Continue roasting the potatoes as needed within the overall cooking time until tender inside.
5.Finish and Serve
Brush or spoon the remaining glaze over the warm salmon and scatter the chopped parsley on top. Serve immediately with the crispy potatoes alongside.
