Blueberry Turnovers


ingredients:

  • 2 ½ cups frozen blueberries
  • ¼ cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 sheet puff pastry
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons turbinado sugar (or granulated sugar)
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1-3 tablespoons cream or milk
    instructions:
  1. In a medium saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over low heat for about 10 minutes, or until blueberries release their juices, stirring frequently .
  2. In a small bowl, whisk together cornstarch and water until smooth .
  3. Stir the cornstarch mixture into the blueberry mixture. Bring to a gentle boil and simmer for 3 minutes, stirring constantly until thickened .
  4. Let the blueberry filling cool until warm to the touch .
  5. Unfold the puff pastry sheet and cut it into 6 equal squares .
  6. Place 2-3 tablespoons of the cooled blueberry filling in the center of each square .
  7. In a small bowl, whisk together the egg and 1 tablespoon of water to make an egg wash .
  8. Brush the edges of each pastry square with the egg wash. Fold each square over into a triangle, pinching the edges closed with a fork .
  9. Brush the tops of the triangles with more egg wash and sprinkle with turbinado sugar .
  10. Preheat oven according to puff pastry package directions .
  11. Bake for 15-20 minutes, or until light golden brown .
  12. Let the turnovers cool slightly .
  13. In a small bowl, whisk together powdered sugar, vanilla extract, and cream or milk until smooth .
  14. Drizzle the glaze over the warm turnovers .
