Skillet Cornbread


Ingredients
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
2 large eggs
1/3 cup melted butter
2 tbsp butter for skillet

Instructions
Preheat oven to 200°C (400°F) and place a cast iron skillet inside to heat with 2 tbsp butter.
In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk milk, eggs, and melted butter until smooth.
Combine wet and dry ingredients and stir just until blended.
Carefully remove the hot skillet, swirl melted butter to coat, then pour in the batter.
Bake for 20–25 minutes until golden brown and set in the center.
Let cool slightly, slice, and serve warm.
