Buffalo Chicken Penne


This is the kind of indulgent comfort dinner that feels like your favorite restaurant meal at home.

      Ingredients:

2 lbs chicken breast, sliced into thick strips

2 tbsp olive oil

8 tbsp butter, divided

10 cloves garlic, minced, divided

3/4 cup buffalo sauce, divided

1 tsp garlic powder

1 tsp onion powder

1.5 tsp salt, divided

1 tsp black pepper, divided

1 lb penne pasta

2 cups heavy cream

1 cup whole milk

1.5 cups shredded mozzarella cheese

1.5 cups shredded cheddar cheese

4 oz cream cheese, softened

3 tbsp fresh parsley, chopped

      Directions:

1- Cook penne in salted boiling water until al dente, then drain and set aside

2- Season chicken with garlic powder, onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper

3- Heat olive oil in a large skillet over medium-high heat and sear chicken for about 3 minutes per side until fully cooked, then remove

4- Reduce heat to medium and add 4 tablespoons butter, half the garlic, and 1/2 cup buffalo sauce, then toss chicken briefly and set aside

5- In the same skillet, melt remaining butter and sautΓ© remaining garlic for 30 seconds

6- Pour in heavy cream and milk, simmer gently, then whisk in cream cheese until smooth

7- Stir in remaining buffalo sauce

8- Add mozzarella and cheddar gradually, stirring until melted and creamy

9- Season with remaining salt and black pepper

10- Toss cooked penne in the sauce until fully coated

11- Plate pasta and top with buffalo chicken, then garnish with parsley
