- 1.5โ2 lb (700โ900 g) pork belly, skin on
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika (optional)
- 1 tbsp oil
Optional Sticky Glaze โจ
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp minced garlic

Step 1 โ Prepare the Pork
Pat the pork belly very dry using paper towels.
Cut into cubes about 1ยฝ-inch (4 cm) in size.
In a bowl combine:
- Salt
- Black pepper
- Garlic powder
- Onion powder
- Paprika
- Oil
Rub the seasoning all over the pork belly pieces.
Step 2 โ First Roast
Preheat oven to 160ยฐC (320ยฐF).
Arrange pork belly cubes in a single layer on a baking tray or wire rack.
Roast for 60โ75 minutes until:
- Tender
- Fat begins rendering
- Edges start turning golden
Step 3 โ Crisp Them Up ๐ฅ
Increase oven temperature to 230ยฐC (445ยฐF).
Roast another 20โ25 minutes, turning once halfway through, until:
- Deep golden brown
- Crispy outside
- Crackly edges
Step 4 โ Optional Sticky Glaze
In a small bowl mix:
- Honey
- Soy sauce
- Brown sugar
- Minced garlic
Toss the crispy pork belly with the glaze.
Return to oven for 5 minutes until sticky and caramelized.

Let rest for 5 minutes before serving.
