Hearty Vegetable Beef Soup

Ingredients:

1 lb (450 g) ground beef

3 cups potatoes, diced

2 cups green beans

1 cup carrots, sliced

1 cup corn

1 cup peas

1 can diced tomatoes (14 oz / 400 g)

1 small onion, chopped

3 cloves garlic, minced

5 cups beef broth

1 tbsp tomato paste

1 tsp paprika

1 tsp black pepper

1 tsp salt (adjust to taste)

1 tbsp olive oil

Instructions:

In a large pot, heat olive oil and sauté the chopped onion and garlic until soft.

Add the ground beef and cook until browned. Drain excess fat.

Stir in the diced potatoes, carrots, green beans, peas, and corn.

Add the diced tomatoes, tomato paste, and beef broth.

Season with paprika, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 35–45 minutes, or until vegetables are tender.

Taste, adjust seasoning, and serve hot.
