Southern Biscuits and Gravy

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour* 1 tablespoon baking powder* 1/2 teaspoon salt* 1/2 teaspoon baking soda* 6 tablespoons cold butter, cubed* 3/4 cup buttermilk

For the Sausage Gravy:

  • 1 pound breakfast sausage* 1/4 cup all-purpose flour* 3 cups whole milk* 1/2 teaspoon black pepper* 1/4 teaspoon salt* 1/4 teaspoon garlic powder

Instructions:

  1. Preheat the oven to 425°F.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  1. Stir in the buttermilk just until a soft dough forms.
  2. Turn the dough onto a lightly floured surface and gently knead 4–5 times. Pat it about 3/4-inch thick and cut out biscuits.
  3. Place the biscuits on a baking sheet and bake for 12–15 minutes, until golden brown.

  1. Meanwhile, cook the sausage in a large skillet over medium heat, breaking it into small pieces as it browns.
  2. Sprinkle the flour over the sausage and stir for 1–2 minutes.
  3. Slowly pour in the milk while stirring constantly. Cook for 5–7 minutes, until the gravy thickens.

  1. Season with black pepper, salt, and garlic powder.
  2. Split the warm biscuits in half and spoon the sausage gravy generously over the top.
