Warm Brie-Stuffed Dates with Honey & Crushed Pistachios

Ingredients

  • 20 Medjool dates, pitted
  • 5 oz Brie cheese, cut into small pieces (140 g)
  • 1/3 cup shelled pistachios, finely chopped (40 g)
  • 3 tbsp honey (45 ml)
  • 1 tsp fresh thyme leaves
  • 1/2 tsp orange zest
  • Pinch of flaky sea salt
  • Freshly ground black pepper, optional

Directions

  1. Preheat the oven: Heat to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the dates: Slice each date lengthwise, keeping the bottom intact, and remove the pits if necessary.
  3. Stuff with Brie: Fill each date with a small piece of Brie, gently pressing the dates closed around the cheese.
  4. Bake until warm: Arrange the dates on the baking sheet and bake for 8–10 minutes, until the Brie is soft and melty.

  1. Add the pistachios: Remove from the oven and immediately sprinkle with crushed pistachios, orange zest, and fresh thyme.
  2. Drizzle with honey: Finish with warm honey, a pinch of flaky sea salt, and black pepper if desired.
  3. Serve warm: Arrange on a platter and serve immediately while the Brie is creamy and the dates are soft and caramelized.
