Garlic Butter Steak Bites and Cheesy Smashed Potatoes

Ingredients:
For the Steak Bites:

1 lb steak (such as sirloin or ribeye), cut into bite-sized cubes
2 tbsp olive oil
4 tbsp butter
4 garlic cloves, minced
1 tsp fresh thyme (or Β½ tsp dried)
Salt and pepper to taste
1 tbsp fresh parsley, chopped (for garnish)
For the Cheesy Smashed Potatoes:

2 lbs baby potatoes, washed and halved
2 tbsp olive oil
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
Salt and pepper to taste
1 tbsp fresh chives, chopped (optional)
Instructions:
For the Steak Bites:

Cook the Steak Bites: Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes and season with salt and pepper. Cook for 3-4 minutes until the steak bites are browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
Make Garlic Butter: In the same skillet, melt the butter over medium heat. Add the garlic and thyme, sautΓ© for 1-2 minutes until fragrant.
Combine: Return the steak bites to the skillet and toss to coat with the garlic butter sauce. Cook for another minute, allowing the steak to absorb the flavor. Remove from heat and garnish with fresh parsley.
For the Cheesy Smashed Potatoes:

Cook the Potatoes: Place the baby potatoes in a large pot and cover with water. Bring to a boil, then simmer for 12-15 minutes until the potatoes are fork-tender. Drain and return the potatoes to the pot.
