Ingredients:
- 2 potatoes, grated
- 1 carrot, grated
- 1 small onion, finely chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 2 eggs
- 1 cup flour
- 1 teaspoon baking powder
- Salt and black pepper
- 1 teaspoon paprika
- Chopped parsley or green onions
- Oil for frying
Instructions:
- Grate the potatoes and carrot, then squeeze out excess water.
- In a large bowl, mix potatoes, carrot, onion, peppers, parsley, and eggs.
- Add flour, baking powder, salt, black pepper, and paprika. Mix until a thick batter forms.
- Heat oil in a frying pan over medium heat.
- Scoop small portions of the mixture into the oil.
- Fry until golden brown and crispy on both sides.
- Remove and place on paper towels to drain excess oil.
- Serve hot with ketchup, garlic sauce, or spicy mayo.
