Cheesecake-Stuffed Apples with Graham Cracker Topping

Ingredients:

4 medium apples (such as Granny Smith or Honeycrisp)
8 oz cream cheese, softened
1/4 cup granulated sugar
1/2 tsp vanilla extract
1/2 cup sour cream
1/2 tsp cinnamon
1/2 cup graham cracker crumbs
2 tbsp butter, melted
1 tbsp brown sugar
1/4 tsp salt

Directions:

Preheat your oven to 350°F (175°C). Grease a baking dish and set aside.
Core the apples, making sure to leave the bottoms intact to hold the filling.
In a mixing bowl, beat the cream cheese until smooth. Add the sugar, vanilla extract, sour cream, and cinnamon, mixing until well combined.
Spoon the cheesecake filling into each apple until they are generously filled.
In another bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Mix until crumbly.
Sprinkle the graham cracker topping over the filled apples.
Place the apples in the prepared baking dish and bake for 25-30 minutes or until the apples are tender.
Remove from the oven and let cool slightly before serving.
