Fried Salmon Patties

Ingredients:

2 cans salmon, drained and flaked

1/2 cup finely chopped onion

1/2 cup crushed crackers

1 egg

1 tablespoon mayonnaise

1 teaspoon mustard

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper to taste

2 tablespoons chopped parsley

Vegetable oil for frying

Instructions:

In a large bowl, combine the salmon, chopped onion, crushed crackers, egg, mayonnaise, mustard, garlic powder, paprika, salt, black pepper, and parsley. Mix until fully combined.

Shape the mixture into small patties and place them on a plate.

Heat vegetable oil in a skillet over medium heat. Carefully place the salmon patties into the skillet and fry for about 4–5 minutes per side until golden brown and crispy.

Remove the patties and place them on paper towels to drain excess oil. Serve hot with tartar sauce, lemon wedges, or your favorite Southern sides.
