Ingredients:
1 kg chicken pieces (legs, thighs, or mixed parts)
1/2 cup soy sauce
1/3 cup white vinegar
6 cloves garlic, minced
1 medium onion, sliced
2 bay leaves
1 tsp whole black peppercorns
1 tbsp brown sugar (optional)
1 cup water
2 tbsp cooking oil
Instructions:
1. In a bowl, combine the chicken, soy sauce, and half of the garlic. Marinate for at least 30 minutes.
2. Heat oil in a large pan over medium heat.
3. Sauté the onion and remaining garlic until fragrant.
4. Add the marinated chicken and cook until lightly browned on all sides.
5. Pour in the remaining marinade, vinegar, water, bay leaves, peppercorns, and brown sugar.
6. Bring to a boil without stirring for 2–3 minutes.
7. Reduce the heat, cover, and simmer for 30–40 minutes until the chicken is tender.
8. Remove the lid and continue cooking until the sauce is reduced and slightly thickened.
9. Serve hot with steamed rice and fresh sliced tomatoes.
Serving Tip:
For extra flavor, allow the adobo to rest for a few hours before serving; it tastes even better the next day.
