Ingredients (Serves 2–4)
Vegetables
2 cups chopped romaine lettuce
½ cucumber, sliced
1 small tomato, diced
½ red bell pepper, sliced
½ onion, thinly sliced
1 carrot, peeled into ribbons
4–5 radishes, sliced
2 cooked beets, sliced or diced
Protein
150 g (5 oz) cooked ham, cut into strips
3 hard-boiled eggs, sliced
Cheese
100 g (3½ oz) cheddar cheese, sliced
100 g (3½ oz) mozzarella or Monterey Jack cheese, sliced
Extras
4–6 baby dill pickles
A handful of green grapes
A handful of red grapes
A few chunks of peeled cucumber (optional)
Dressing
½ cup ranch dressing (or your favorite creamy dressing)
Homemade Ranch Dressing (Optional)
½ cup mayonnaise
¼ cup sour cream
2 tablespoons milk
1 teaspoon lemon juice
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon dried parsley
Salt and black pepper to taste
Mix all ingredients until smooth.
Instructions
- Wash and dry all vegetables.
- Arrange the lettuce as the base on a large serving plate.
- Neatly arrange the cucumber, tomatoes, peppers, onions, carrots, radishes, beets, grapes, and pickles around the plate.
- Place the sliced ham in the center.
- Add the cheese slices and hard-boiled eggs.
- Drizzle generously with ranch dressing just before serving.
- Serve immediately with crusty bread, crackers, or grilled chicken if desired.
Tips
Chill the salad ingredients before assembling for the freshest flavor.
Add grilled chicken, turkey, bacon, or avocado for extra protein.
Sprinkle with black pepper or fresh herbs for extra flavor.
