Avocado Mayonnaise


Ingredients:

  • 1 ripe avocado
  • 2 boiled eggs
  • 2 tbsp olive oil (or any neutral oil)
  • 1 tbsp lemon juice
  • ½ tsp salt (or to taste)

Instructions:

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

  1. Add the boiled eggs, olive oil, lemon juice, and salt.

  1. Blend until completely smooth and creamy.

  1. Taste and adjust the salt or lemon juice if needed.

  1. Serve immediately or store in an airtight container in the refrigerator for up to 2 days.
