Ingredients:

  • 2 potatoes, grated
  • 1 carrot, grated
  • 1 small onion, finely chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 2 eggs
  • 1 cup flour
  • 1 teaspoon baking powder
  • Salt and black pepper
  • 1 teaspoon paprika
  • Chopped parsley or green onions
  • Oil for frying

Instructions:

  1. Grate the potatoes and carrot, then squeeze out excess water.
  2. In a large bowl, mix potatoes, carrot, onion, peppers, parsley, and eggs.
  3. Add flour, baking powder, salt, black pepper, and paprika. Mix until a thick batter forms.
  4. Heat oil in a frying pan over medium heat.
  5. Scoop small portions of the mixture into the oil.
  6. Fry until golden brown and crispy on both sides.
  7. Remove and place on paper towels to drain excess oil.
  8. Serve hot with ketchup, garlic sauce, or spicy mayo.
